Introduction:
Here wine does not refer to western grape wine. It refers to Japanese sake—in Japanese it is called Nihonshu. Stems from Chinese cooking wine, there are two famous sake: Ginjo-shu and Daiginjo-shu

Ginjo-shu is made from rice polished to 60% or less of its original weight. Sake made from rice polished to 50% or lower of it is called daiginjo-shu.

Application
